I want a car that has 4 seats. But here is the biggest thing. I want a car, where you have to wind it up to get the power. I want to have to work to get the power. The best example is something like the e92 M3 with the V8. I hated it because there was so much immediate power. Any good examples of cars with the aforementioned conditions that are under 20k?

The 1989-1996 Q45 and 2003-2004 Infiniti M45 come to the rescue, each with their respective benefits:

Both get peak torque around 4500rpm, and both have redlines around 7000. They're rev-happy homog engines.

The Earlier VH45DE is stronger but only has 280HP, the later VK45DE has weaker internals but better valvetrain for 340HP. Both are naturally aspirated, so revs are the key to those high specific power outputs for a V8. Both should be easily available for under 20k.

Any other Nissan with a VQ engine will also require significant spooling to get up to speed. Around the mid-90s they took to that over boost, changing their structure by replacing the turbo SR, CA, VG and RB engines with the large-displacement, higher-revving VH, VK, and VQ engines.

Sounds like you're looking for something older with a smaller engine and a turbo, much lag, then the power comes.
